Everything You Want to Know About the Different Salmon Species

Did you know that there are five species of Pacific salmon and one species of Atlantic salmon? Further, did you know that all 5 species of Pacific salmon run wild in Alaska?

We’re proud of our wild salmon here in Alaska, and rightly so. On the one hand the wild salmon are great sport fish and we Alaskans love to spend gorgeous summer weekends challenging them.

On the other hand our commercial fisheries are healthy and self-sustaining. They are able to catch enough wild salmon to satisfy most of the world wide demand for fresh wild fillets in the restaurants and packaged wild salmon on grocery store shelves.

King Salmon

The Chinook salmon is nicknamed king salmon in Alaska. It is the official Alaska state fish.

Description

Of all the Pacific salmon the king is the largest. A 97-pound king was caught by a sport fisherman in 1986 on the Kenai River. In 1949 a 126 pound king was caught commercially near Petersburg, Alaska. Typically king salmon weigh 30 pounds and above.

The king is lightly and irregularly spotted on their blue-green back. They also have a black pigment along their gum line. Spawning kings in fresh water range in color from red to copper to almost black.

Life Cycle

All species of Pacific salmon hatch in fresh water, spend part of their life cycle in the ocean, then return to fresh water to spawn.

The king salmon generally live 5 to 7 years, though they can mature by their second to third year. As a result the kings in a spawning run can vary greatly in size. A mature 3-year old may only weigh 4 pounds while a mature 7-year old may exceed 50 pounds.

The young king salmon feed on plankton and insects during their fresh water period. During their second year they migrate to the ocean where they grow rapidly.

Some kings make immense spawning migrations. For example, many of the Yukon River kings will migrate over 2,000 miles during a 60 day period to reach the streams and headwaters in Yukon Territory, Canada.

Taste

The king salmon has a rich flavor, firm flesh, and a pleasing red color. Kings caught at the mouth of the Yukon River have a huge store of oil in their flesh for their long upriver migration. The result is an extra-rich flavor, much prized among those who love salmon.

Sockeye Salmon

The Sockeye salmon is also called the red salmon due to the bright red color of its flesh, and it is the second most abundant salmon species in Alaska.

Description

Sockeye salmon are the slimmest and most streamlined of the 5 species of Pacific salmon. They differ from kings, silvers, and pink salmon by the lack of Large Black spots, and they differ from chum salmon by having more gill rakers on the first gill.

Sockeye are generally a greenish-blue color with silver sides and a white or silver belly.

During the spawning season the Sockeye males develop a humped back and a hooked jaw. Both male and female Sockeye turn brilliant to dark red as they head upriver to their spawning grounds.

Life Cycle

After hatching during the winter and spending a few months in the river gravels, the juvenile Sockeye spend 1 to 3 years in freshwater before migrating to the ocean.

The Sockeye spend 1 to 4 years in the ocean, ranging thousands of miles while feeding and then returning to the same freshwater system where they were born. They reach an average size of 4 to 8 pounds, sometimes reaching in excess of 15 pounds.

Bristol Bay, in southwestern Alaska, annually harvests the largest number of Sockeye salmon in the world. About 10 million to 30 million Sockeye are caught during a short season that lasts only a few weeks.

Taste

The Sockeye salmon has an exquisitely rich flavor due to the high concentration of oils. It is an excellent source of Omega-3 fatty acids. The rich red flesh color is maintained throughout cooking which results in a beautiful presentation. Some people consider the Sockeye to be the most flavorful of all the salmon species.

Silver Salmon

Coho salmon are known as silver salmon in Alaska and are an excellent game fish.

Description

Coho salmon have bright silver sides and have small black spots on their back.

Spawning salmon of both sexes develop red to maroon colored sides. The males develop a hooked snout with large teeth.

Life History

Juvenile silvers live in ponds and lakes formed by rivers and streams. They generally spend one to three years in the streams and may spend as many as 5 winters in lakes before migrating to the ocean.

Silvers stay in the ocean, where they grow quickly, for about 18 months before returning to their home streams. They weigh from 8 to 12 pounds, but can range up to 31 pounds. Their length ranges from 25 to 35 inches.

Taste

The flesh color of silver salmon is orange-red and is retained during cooking. The texture is firm and the fat content is high. The taste is a pleasing full salmon flavor, slightly milder than that of the Sockeye. The size of a fillet is larger than that of the Sockeye, and it is a prized fish for cooking.

Pink Salmon

Pink salmon are also known as the humpback in Alaska. Prior to spawning the pink salmon develops a pronounced hump on its back.

Description

The color of the pink salmon is generally a bright steely blue on top and silver on the sides. It has many large black spots on its back and over the entire tail fin. It has small scales and its flesh is pink, befitting its name.

The spawning pink salmon develops an olive green to black color on its back with a light-colored to white belly. It develops a very pronounced hump and hooked jaws.

Life Cycle

The young pink salmon hatch during the winter and spend a few months in the river gravels. During the spring they migrate downstream to the ocean. They feed along the beaches before moving out further into the ocean.

Like all salmon, the pinks grow rapidly in the ocean but they are the smallest of the Pacific salmon species. The pinks reach a size of about 3 to 5 pounds and about 20 to 24 inches in length.

The pink salmon spends only two years in the ocean. This two year pattern causes distinct odd-year and even-year cycles which are unrelated to each other.

When the pinks return to freshwater, they are the most abundant of the Pacific salmon species. They do not migrate far upriver, but generally spawn within a few miles of the mouth of the river. As with the other Pacific species both male and female pinks will die within a couple of weeks of spawning.

Taste

The pink salmon has a delicate, mild flavor and a light flesh color. About 80% of harvested pinks are canned and are the most common salmon species found on grocery store shelves.

Chum Salmon

Sometimes called “dog salmon” in Alaska; the chum salmon is a traditional source of dried fish for winter use.

Description

Chum salmon have a metallic greenish-blue back surface with fine black spots. They resemble sockeye and silver salmon so closely that one needs to examine their gills and fins closely to make a positive identification.

When nearing fresh water the chum salmon develops noticeable vertical bars of green and purple, which gives them another nickname, calico salmon?

The spawning chum develops the typical hooked jaws like other Pacific salmon and large teeth, which partially accounts for their other nickname, dog salmon.

Life Cycle

As with pink salmon, the young chum do not spend much time in fresh water before migrating out into the ocean. They feed near the mouths of their streams for a period before forming schools and moving further out into the ocean.

The chums spend 3 to 5 years in salt water, growing rapidly after entering the ocean. They generally range in size from 7 to 18 pounds, sometimes reaching 30 pounds in weight.

When the chums return to fresh water they often spawn in the same areas as the pinks, not migrating far up river. One major exception to this pattern is the chum salmon population of the Yukon River. Some of these chums migrate 2000 miles upriver to spawn in Yukon Territory of Canada. These chums have a very high fat content in preparation for their long migration.

Taste

Chum salmon have a mild, delicate flavor with a medium red flesh color. However, Yukon River chums, with their higher fat content, have a rich, full flavor similar to Kings and Sockeye.

Atlantic Salmon

Atlantic salmon are not native to the Pacific coast but are raised in large numbers in pens. They run wild on the Atlantic coast only. The Atlantic salmon found in markets are farm-raised, generally originating in salmon farms off Chile or British Columbia, Canada.

Description

Atlantic salmon in the wild have silvery sides and belly with greenish-blue coloration on its back.

Spawning Atlantic salmon develop blackish fins and purplish coloration and reddish spots. Surviving adults are dark in color.

Here’s a tried-and-true hard candy recipe, straight from the pages of Cooking for American Homemakers. I have used this gem for many years for lollypop making and it is first rate for making the “medium:”

1 cup sugar

1/3 cup light corn syrup

2/3 cup water (herbal tea)

vegetable coloring (optional)

Mix sugar, herbal tea and corn syrup and cook over low heat stirring until sugar is dissolved and mixture boils. Continue boiling without stirring until a small amount is very brittle when dropped into cold water. Wash away crystals from side of pan with a damp cloth. Cook slowly at end so that the syrup will not discolor. Remove from the heat and add color. Either drop quickly from the tip of a spoon onto a greased surface or into prepared hard candy molds. Allow to harden and cool completely before removing. You can roll them in powdered sugar and wrap in plastic wrap or waxed paper for storage.

An Introduction to Salmon Fishing

Where to fish for salmon or the Chinook or the king salmon. The pacific salmon range from California to Alaska. These anadromous species can be found in most pacific coastal waters, streams and rivers that have a good flow of water and temperature as well as a suitable habitat for going up to spawn. You will find that they may be as many as three spawns per year, spring ,summer, fall.

The average size of the Chinook can be from 16 to 20 lb. but you will see larger fish up to 55 lb. taken from the remote areas along the pacific coast .From BC Alaska you can catch the largest or the Chinook. Fish up to 65 lb. which are common have been taken from the coastal areas.

The Chinook will return to the river in which they spawned from at the age of 2 to 7 years old. The salmon will travel over 7000 miles at sea to return to its spawning grounds. One of the longest river spawns is the 2000 miles battle up the Yukon River located in the state of Alaska.

With the advancement of man a lot of the smaller streams have been choked of with pollution and silt from local construction. Some of the streams have been filled in for housing and commercial use. There has been a increase of volunteers to clean up the streams and repair the gravel spawning grounds. With some success the salmon have slowly been returning to these devastated areas.

The salmon use solar navigation ,smell, day light and rain fall to help guide them to the spawning grounds. Most need a gravel bed of course gravel to spawn in. The female will dig out a spot and lay her eggs and the male will fertilize the eggs with jets of milt. Both fish die with in days of spawning.

The spawning fish feed many bears ,bird like the eagles and people on the run up to their spawning grounds. The decaying fish supply food for the river or stream organisms which provide food for the fry after the hatch. The fry will spend up to 18 months in the river and stream systems before heading out to sea to repeat the process all over

Before you fish for salmon you will need to check the regulations in the area you are planning to fish in every area will have different regulations. Time to fish size limits and the number of the fish you may keep. State and Provincial Regulations must be followed as the fines can be very large if you get caught fishing with out the proper license or are out of season. Always check with the regulatory body for the area you will be fishing in. Better to have what you need than to lose a boat or vehicle or go to jail.

If fishing in early spring or late summer or in the fall be aware that you may see bears of all sizes after all you are fishing in their favorite spot. Give them a wide berth they are hungry and will protect their territory. Better to play safe than to have a bad encounter you will lose if you come into contact with a bear.

Trolling from a boat will help you avoid the bears. The down rigger is very popular to get the bait down to the level to which the salmon are at. Trolling depth will vary from 10 ft to 150 ft a lead cannon ball from 2 to 10 lb. will be used .Hootches , and anchovies work in most location best to check with the local guides to find out what is working on the given days you are fishing.

Carp Fishing Baits And Tackle Best Proven For Big Fish Confidence And Success!

You do not have to be a big name high profile angler to be able to offer advice – after all literally anything you have learnt, adapted or refined in your own fishing that has helped you catch fish can be passed on to others to help them – often to very great effect! Unique experiences, insights and understanding from decades of fishing is extremely valuable and just one tip can make a quantum leap in your catches – so read on now!

Many anglers on the bank are completely dependant upon using readymade baits but are frustrated because they still do not catch the numbers of fish they desire. Ready made baits have made a massive difference in carp fishing – a complete beginner can simply buy everything, from all the tackle he needs, to bait, fishing tickets and venue information and methods to fish venues etc. But even experienced anglers get fixated by their baits and definitely get into a mental rut about them – and this really limits their catches considerably!

Speaking yesterday with an experienced angler at one north Kent water yesterday gave me a fine example of how we can become the actual barrier to our own fishing success! This guy had explained to me how the particular water was hard. Well I never take much notice of that. Frankly it is up to each and every angler to think for himself and understand why a water is hard – usually it is because the anglers have conditioned fish to behave in certain defensive ways in response to their baits, rigs, methods of fishing and even sensitised them to almost every aspect of having anglers present on the bank – which the carp are highly aware of.

This guy was frustrated because he said that a few guys on the lake had banded together and were putting into the lake a quantity of popular readymade boilies – and they were catching good fish. He had tried the same bait and was struggling to catch moaning that he could not afford to put out much bait unlike these other anglers.

The mentality that this guy had formed meant that he had become fixated on what other anglers were doing and what bait they were using – and had completely stopped thinking like a fish – which is the most powerful mentality in carp fishing! (Far too many anglers I meet think like anglers – concentrating on what readymade bait they are going to be using and what new rig they will be trying that they saw in a magazine – and how beautiful their new spod rod and reel is – and so on!)

I was standing there on the bank when this angler I was talking to reeled in. He was fishing as stereotypically as possible. He had spodded-out into his swim a very standard mixture of whole readymade boilies and popular pellets and his rigs were round white readymade pop-up boilies on a rig of very standard material, dimensions and mechanics.

It was as if he had literally just finished reading a typical magazine article, and gone fishing copying the most fashionable parts of what he had seen and read – yet when I asked him why he was using what he was using as opposed to other tackle and baits his answer was basically that he had read and seen this stuff in the magazines – so it had to be good right! He did not actually understand what he was doing and why – therefore he was not maximising what he was doing to overcome the challenges the carp in the lake represented – because he was not actually solving problems and overcoming them – and so was not catching as many fish as possible!

Watching the lake it was clear that anglers were fishing in very stereotypical ways and were not assessing the major factors influencing fish behaviour on that very day. If they had been they would have been catching fish. The guy I was talking to told me that the water was hard. He explained to me that he wished he had the confidence to fish bread right next to the special duck feeding area that the public use to throw bread into the lake – and where carp are occasionally seen feeding knowing this is a safe no fishing area.

He expressed his frustration at not being able to simply put some bread on and cast into that area! In saying all this he was basically saying that he had very little confidence in his readymade boilies – and why should he when they were supposed to be so good, yet the carp could be seen feeding confidently in the safe area and yet fed much more cautiously over the boilies introduced!

I suggested it was not the bait that was the problem but the fact that this guy was fishing so stereotypically that the fish could very easily avoid his hook baits and avoid any suspicious baits with ease – while hovering up his free baits and moving on again! Much of this conversation really came down to a lack of confidence in the mind of this angler – because although he had the tackle and the baits he really did not understand what drove the fish behaviours – and how to get around their defence behaviours – or even re-programme new behaviours.

To be able to re-programme new fish behaviours might seem mad until you consider that anglers re-programme fish behaviours all the time by any and all aspects of their fishing activities. We have the power to re-programme fish yet the majority of carp anglers seem to be too focussed on copying other anglers and their baits and methods – that have already lost their edge by the time they get on them! Very often it only takes one negative experience with a bait for a fish to always be fearful of it – and this transmits to other fish too; this is no over-exaggeration!

Carp fishing magazines have a tremendous impact on the group mentality and perceptions of anglers as a whole. By that I mean that the majority take what they perceive to be the easy quick route to success by simply copying what they read – because that is human nature I guess – but in fact in carp fishing it is far more powerful to be unique in what you do and with the baits you use – and how you use them!

The most powerful starting point in carp fishing is not the bait or tackle but understanding the fish. When you understand in far greater detail what drives fish to behave the ways they do and why these behaviours change through a day,  a week, a season, you can really look at manipulating carp behaviours in your favour – and bait

substances can do this in an enormous range of ways! But of course a huge number of bait substances both well known and known by very few really do not get the attention they deserve in relation to the potentially incredibly powerful ways that they impact on water and on carp externally and internally do they?

Think about it – unfortunately because nearly every carp fishing magazine is a predominantly product-promoting vehicle that is where the focus of the articles is – or should I say advertorials, as the vast majority of anglers getting space in these magazines are so-called sponsored anglers! Magazines are a great way to learn but are also a great way to become totally confused.

So many different angling writers have different experiences, preferences and biased opinions about not only what tackle and baits to use but why and how to use them and this is to be expected because everyone is different. But having said that it seems that most anglers totally overlook that they are unique and different to everyone else – and appear to seek to fit in and do pretty much the same as everyone else. It actually would not matter if the topic of the magazines happened to be gardening, guitars, computer games or mobile phones, vintage car maintenance or whatever.

In many cases the writers insist that their justification for recommending certain products is that their products are the best – but all these things are of their time – and carp are constantly adaptive creatures that alter their behaviours when they get stressed by being hooked or simply get stressed by experiencing too much angling pressure.

I would really like to see far more focus on the fish again – in the early days before magazines proliferated the articles were certainly in many ways much more about the fish. I find it fascinating how individual carp develop and grow from unnoticed single and double figure fish and over the years begin to attract attention when their size or looks or other factors draw attention to them. Some fish are very interesting not for their size but for their behaviours. You might expect that the biggest fish in a water would be the hardest to catch but some of the smaller fish can actually be caught far less.

I consider that asking yourself why this is an extremely powerful method of improving your fishing success yet the answers to this question really revolve around all the major factors that influence fish behaviours.

When you consider that much bigger carp have far greater essential dietary requirements than smaller carp you can see how you can exploit this fact to your advantage. If fish are predominantly natural feeding fish then this can also be exploited – but of course you have to study your fish and get to understand this first to really make the most of it.

The guy I spoke to on the bank had shown his excitement when I mentioned some ideas in regards to adapting his readymade baits so they performed much more effectively. It is very easy to make a readymade bait unique and different enough to make fish feed far more confidently on them – as if you are literally the very first angler to use them on your lake – even if you are just about the last! One of the simplest ways to beat bait sponsored anglers is to adapt the popular readymade bait they are using so it become both a partially familiar but new bait at the same time.

Some of the lesser quick easy methods are using liquids. For instance you might soak your Mainline Cell boilies in CC Moore Feedstim XP liquid, or soak your Richworth Tutti Fruiti boilies in CC Moore Liquid Super Slop for instance. These are very mainstream ideas and I much prefer to actually change the nature and characteristics of readymade baits completely to form something new entirely.

For instance you might use a bait grinder to grind up some Solar Byt and Club Mix boilies, add to them some Richworth Salmon Supreme boilies and bind these up in CC Moore N-Gage base mix with CC Moore Feedstim XP and CC Moore Liquid Salmon and Krill Extract for instance. Binding materials can literally be anything but the point is that you will have created something new from popular baits that have a great track record.

But for me personally even doing this is false confidence but not because it will not be successful far from it, but this example is merely a totally random idea to offer fish something different. It does not take account of many factors that influence individual fish behaviours – because the starting point focus is products – and not the fish and their defensive behaviours.

For instance in the lake that I visited yesterday, the fish were very obviously fast approaching spawning time and were located spending much of their time filter-feeding on richly nutritional phytoplankton and zooplankton. Making very simple homemade baits using ingredients and additives related to such items such as seaweeds, spirulina, daphnia and vegetable extracts for instance is very simple.

Such baits will catch fish even if they contain just 2 ingredients – so they do not have to cover all nutritional angles at all! Think about it; a bait made from pre-digested yeast, peanut butter, LT94 fish meal and a little blood or blood plasma powder with CC Moore Liquid Red Venom for instance, is actually a very complex bait indeed when you consider what this bait offers nutritionally – and how it will impact on carp senses and how it will influence carp internally in your favour!

Bait texture is just one aspect you can obviously change at will to add different advantageous edges to your baits. For example why not try crushed mealworms and casters plus oat bran, whole rolled oats or even crushed or chopped sweets for example when making fresh baits on the bank? Such things really can make all the difference. How many baits do carp experience that are packed with crushed extra strong mints, chopped Liquorice Allsorts or chopped Haribo jelly sweets for instance?

Even a homemade bait made from ground catfish pellets bound with semolina, boosted with L030, pre-digested liver and concentrated liquid yeast for instance will be an instant winner – especially if you avoid using liquid eggs! If you need extra confidence when using pastes why not try using a percentage of ground CLO bird food and whole egg powder for instance (there are endless other possibilities) – use neat nutritional liquids maybe with additional blood powder to help binding and improve soluble impacts on the water surrounding the baits and increase impacts on carp sensory systems etc.

Making homemade baits to suit the day you fish is easy too and recipes can be very economical, fast and easy to make – so why not make your baits on the bank? Few anglers do this because it is not fashionable and because most anglers are just not thinking enough for themselves yet; but soon enough it will be fashionable. But why not do it right now – and gain vital competitive edges over carp and competing baits?

You can actually make very simple pastes that last over 20 or more hours immersion without any need for boiling, steaming or cooking of any kind – thus maximising nutritional attraction but just as importantly also boosting the impacts of unlimited bait substances diffusion into the water that seriously turns fish on! A fisheries biologist is well-versed with the ways of the trout and how and where to catch them. Brian spent his career managing recreational trout fisheries, worked on habitat protection and management plans for various lakes.

He said that trout are usually present in eutrophic lakes. These are lakes that are shallow and us and usually have intermittent or no inlets or outlets, which means that they have low flushing rates. The soils and geology around it make them nutrient-rich so that they grow insects for fish.

Brian talked about several other topics including alkaline and acidic lakes, spring and winter turnovers, thermocline, the main food sources for trout, and a lot of other stuff.

Children should all grow up fishing. Dad or Mom starting them out and teaching them what to do so they are hooked, on a positive sport and not drugs or bad habits. Some where along the line, families forgot about generational teaching; Grand Dad teaching Dad, Dad teaching you and you teaching your children.  Fishing is such a positive way to spend time together and share ideas on moral issues and other aspects of what it means to have real fun without going against the ways of nature. Children love to fish if they are started off with a positive fun experience; we see it every day here at: FISHING at Country Cove Village although, not unlike most of us, work and family situations prevent fishing as much as the Children would prefer to

So, what was it that Dads can do to make a difference? Let me give you a few tips.

First off, start them young. Get on the bank at as young an age as you possibly can. Obviously though you need to exercise parental consciousness about their safety. Whatever you do, DON’T plan on any fishing yourself, because here at FISHING at Country Cove Village that’s just what parents do or at least one of you will tend to the children baiting, helping them learn to cast and play it in and then unhook the fish. If fishing is going to happen, the fishing will be done by the kids with your help! This lets you pay attention to them and not ignore them while you fish. I see too many parents getting frustrated with children who are “getting in the way” of their fishing; but once the child has learned the basic it quickly become a fun competition for all of you. 

Secondly, make sure you plan the first trips to someplace that you can actually catch a lot of fish such as: FISHING at Country Cove Village. At this point, it does not matter what kind or how big, just make sure they can catch some. A small child’s patience is very short, and waiting 30 minutes for a bite will turn them off in a hurry. You may need to go to a small pond where the Bluegills are biting on just about anything and everything and remember, this is for them, not for you. At least not at the start, but then stand back and soon they’ll be teaching you, ready or not, it’s in their nature.

As they fish, Brag and Cheer about every fish they catch. Make an exciting experience out of it. Take lots of pictures.

Once you do this several times, they both boys and girls will be trying to take you fishing; like just about every day.

Remember though it is your parental responsibility to make sure that in that day of excitement, they do not get to hot or have too much sun; that will turn them off of fishing for it will make fishing equal discomfort in their minds.

As your child grows older, make sure they get their very own fishing gear to fish with. They need “their own” rod and reel, tackle box, and fishing hat, you know how important yours is to you. Of course, as he ages, those items will escalate in price, but it is worth the money, believe me.  Then one day they will start buying their own special need gear!

We see on the news every day about kids of all ages doing really stupid things and getting in trouble with the law because their parents are just too busy for them.  Get your children hooked on fishing and you will never have to worry about them or what they are doing because they will be fishing.
